Lightened up Lemon Loaf
Ingredients
3 large eggs
¾ cup of *granulated sugar
1 cup non-fat Greek yogurt
½ cup no sugar added applesauce
2 Tbs lemon zest
1 Tbs lemon extract
1 ½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
Lemon glaze
½ cup confectioners’ sugar
1-2 Tbs of lemon juice
Splash of milk or as needed for consistency.
Instructions
Preheat oven to 350F. Spray a 9 x 5 inch loaf pan with cooking spray and set aside.
In a large bowl add eggs, sugar, yogurt, and mix until smooth. Add applesauce, lemon zest, lemon extract and continue to whisk.
Next, add the flour, baking powder, salt, and stir until just combined. There should be some lumps; careful not to over mix or it will come out too dense.
Bake for about 50 to 52 minutes, or until top is domed, set, and toothpick inserted in the center crack comes out clean. Allow loaf to cool in pan on top of a wire rack for at least 30 minutes before turning out onto rack. Cool completely before glazing.
To make the glaze
In a small bowl, add the confectioner’s sugar and slowly drizzle in the lemon juice while whisking until smooth. You may need to play with the sugar and lemon juice amounts a bit as necessary for desired consistency and flavor.
Drizzle glaze over bread before slicing and serving.
